Bresaola is air-dried, salted beef that has been aged two or three months. It is lean and tender, with a sweet, aromatic smell.
It's traditionally served in very thin slices, dressed with a drizzle of extra virgin olive oil and a squeeze of lemon juice. Or have it on some Carasau bread wth a Parmigiano-Reggiano cheese.
Once sliced, it dries out quickly so it's best to have it sliced to order.
